4 Grain Tahini Lettuce Wrap



Heat Oven To 400°

Ingredients:

1     Red Bell Pepper
1     Yellow Bell Pepper
2     Slices Red Onion
30  Tear Drop Tomatoes
1     tsp. Olive Oil

Ingredients:

4    Cups
4 Grain Cereal
1    Cup Tahini-Dill Sauce
1/2 Cup Garbanzo Beans, canned

Garnish:
8   Lettuce Leaves
1   Avocado, sliced
2   Radishes, sliced
     Extra Tahini Sauce




Clean and slice peppers and onion.

Slices need to be about a half inch across.

Place on a sheet pan with tomatoes.

Drizzle oil over onion slices.

Roast in oven for 25 minutes.




Let vegetables cool on tray.

When vegatables are cool, cut peppers and onion into medium size pieces.

Wash and measure the garbanzo beans.

Place 4 grain cereal into a mixing bowl.

Add the vegetables, garbanzo beans and tahini sauce.

Mix all ingredients together well by hand.

To Serve:

Place a scoop of the 4 grain salad into lettuce leaves.

Garnish with some radish slices, avocado and a bit of the tahini sauce.



New Taste Thinking:

This is a great lunch all by itself. It can also be a late afternoon snack or a nice salad with your dinner.
This recipe is a good example of just how versatile grains can be. You may have never considered eating a grain dish like this. I know that you will be pleasantly surprised the first time you do.
