Almond Crusted Trout Filet
w/ chopped summer vegetable salad

 
Ingredients:
 
3      Boneless Trout Filets, about 6 to 7 ounces each
1      Tablespoon Olive Oil
1      Pinch Salt and Pepper
1/4   Cup Almond Meal
3      Cups Chopped Summer Vegetable Salad

Purchase the trout boneless if you can.
 
Remove all bones from the trout filet.
 
Lightly oil a sheet pan.
 
Place trout onto the pan.
 
 Brush a little olive oil over each filet.
 
Sprinkle trout with salt and pepper.
 

 

 
Heat broiler in the oven.
 
Place trout about eight inches away from the heat.
 
Broil trout for about five minutes.

 
Remove trout from the broiler.
 
Sprinkle with almond meal.
 
Place trout back under the broiler.
 
Broil until almond crust begins to brown.

 
Remove trout from oven and serve.

 
Almond meal is made out of finely ground almonds.
 
It is a great ingredient for baking.
 
You can buy this product or you can chop almonds in a food processor.
