Apricot Marmalade

Ingredients:

6     Ounces Dried Apricots
1/2  Cup Water

Note:
The apricots in this photo are dried, non-sweetened, non-sulfite.

You may want to use these kind of apricots if you can find them.

Place apricots and water into a pan.

Bring water to a boil for a few seconds.

Remove pan from heat and cover.

Let apricots steep in the water for 15 minutes.

Remove half of the water from the pan and reserve.

Place apricots and other half of the water into a food processor.

Run machine for about a minute to make the apricot marmalade.

You may need to add a bit of the reserved water if the puree is too thick.

Remove marmalade from machine.

Cover and refrigerate for up to two weeks.
