Chilled Asparagus Salad
with Citrus-Honey Dressing

Heat Oven To 400°

Ingredients:

1     Pound Medium Size Asparagus
2     Shallots
1     Yellow Pepper
1     Tbs. Olive Oil
1     Pinch Salt & Pepper

Cut off bottom third of asparagus and discard.

Slice shallots and pepper into long, thin strips.

Place a sheet of foil onto a sheet pan.

Add oil to pan; Toss vegetables in oil.

Season with salt and pepper.

Roast vegetables in oven for 20 minutes.


Remove cooked vegetables from hot tray and place on a cool plate to stop the cooking process.

Citrus-Honey Dressing:

1     tsp. Orange Zest
1     tsp. Lime Zest
1     tsp. Grated Ginger
1    Tbs. Sesame Oil
2    Tbs. Rice Vinegar
1     Green Onion, sliced thin
1     Tbs. Honey
2     Tbs. Soy Sauce
2     Tbs. Orange Juice
1     Tbs. Lime Juice
1     Tbs. Sesame Seeds
1/8   tsp. Granulated Garlic
1     Pinch Salt & Pepper




Take zest off of lime and orange; Grate ginger.

Squeeze lime and orange for juice.

Add all citrus-honey dressing ingredients to a bowl and mix well.





Place slightly warm asparagus and vegetables into a glass baking dish just large enough to hold them.

Drizzle all of the dressing over the asparagus and toss a few times.

Cover dish with lid or plastic and place in fridge for a few hours.

Serve with a fresh sprinkle of sesame seeds on top.
