Avocado Sashimi w/ Soy Vinaigrette

Ingredients:
1 Avocado 1/4 English Cucumber, no seeds 10 Cherry Tomatoes 6 Sprigs Cilantro 1 tsp. Sesame Seeds 6 Tbs. Soy Vinaigrette

Cut cucumber into long, thin julienne slices.

Cut avocado in half; Remove pit.
Use a spoon to remove the skin.
Lay avocado on cutting board and slice very thin.
Try not to cut all the way through the stem as this will hold the cut avocado together.
Push down on one side and avocado will fan out as seen in photo.

Place julienne cucumber onto a plate.
Place avocado on top of cucumber.
Garnish with sliced cherry tomatoes and cilantro sprigs.

Drizzle 3 tablespoons of soy vinaigrette over the avocado.
Sprinkle with sesame seeds and serve.
This salad goes great with some sliced cold poached shrimp.
