BBQ Beans



Ingredients:

1   Can Pinto Beans, 14 oz.
1   Can Red Beans, 14 oz.
1   Can Great Northern White Beans, 14 oz.

Wash and strain the beans.



1/2   Red Pepper
1/2   Green Pepper
1/2   Onion
1      Stalk Celery
3      Cloves Garlic

2      Tbs. Olive Oil


Dice all of the vegetables.


Place oil and vegetables into a hot pan.

Cook and stir vegetables for about 10 minutes.

Vegetables should be cooked soft and just begin to brown.



1    Recipe Reasonable BBQ Sauce
1    Cup Vegetable Stock or Tomato Juice or Water
1    Tbs. Dijon Mustard
      The Beans

Add all of the above ingredients to the pan.

Mix well and bring to a boil.

Turn heat down to a gentle slow simmer.

Cover pan and cook for about 45 minutes, stirring from time to time.

Sauce will thicken and coat the beans.

Remove from heat and serve.
