Note: Whole Food philosophy would be to eat seeds and skin which is also fine for the recipe.
I do not like the taste of the cucumber skin.
Cook, peel and small dice the beets.
Place diced beets and cucumber into a mixing bowl.
Note: Cooking procedure for beets are covered on the beet and apple salad recipe.
Cut the onion into a small dice and add to bowl.
Wash, dry and mince the dill, add to the bowl.
Place all of the dressing ingredients into a small mixing bowl and blend together with a whisk.
Add dressing to the bowl with all the other ingredients.
Toss everything together and serve.
Also taste great if you let it sit and marinate for a few hours or overnight.
New Taste Thinking:
If you find yourself making the baked potato or the baked sweet potato recipe from time to time you should use the opportunity to roast the beets as long as you have the bbq hot already. Just let the beets cool and make the salad the next day!
Quick I.Q. / Personality test...If you like the above idea of cooking the beets ahead of time and saving some energy, is your first inclination to put all of the items, Idaho potato, sweet potato, foil wrapped beets, onto the above the grill rack at the same time and take them off as they are ready or would you put the longest cooking item, the beets at 80 minutes on first, followed by Idaho potato, 60 minutes, and then the sweet potato, 40 minutes?
