Tender Beet Greens
w/ Lots of Garlic & Crushed Red Pepper



Ingredients:

2      Bunches of Beets
2      Tbs. Chopped Garlic
2      Tbs. Olive Oil
1/4    tsp. Salt
1/4    tsp. Crushed Red Pepper

2      Tbs. Lime Juice
2      Tbs. Water




Fill a large bowl or sink with water.

Tear beet greens from the beets.

Wash both the beets and greens two or three times, changing the water as needed.

Place beet greens into a strainer to dry.



Tear the beet greens into medium size pieces.

Discard the tough stem.



Place oil, garlic, salt and red pepper into a pan.

Turn heat to high and start cooking the ingredients.

Cook and stir ingredients until garlic sizzles and starts to turn light brown.


Add beet greens to pan and give them a quick stir.

Add the water and lime juice and immediately cover the pan.

Let beet greens steam in the pan for about 30 seconds.

Remove greens from the pan and serve.
