If you make full batches of the recipes on this site you will always have lots of leftovers. The three recipes above were all made on different days. Today I have plenty of food and no need to cook. These three items go amazingly well together. They make a great lunch simply served on a plate or rolled as a wrap.
Spread lentils over the lavash.
Sprinkle with quinoa.
Add a few beets over the top.
Add some chopped lettuce, cabbage or watercress if you have any on hand.
