One beautiful head of Boston lettuce.
This lettuce is sometimes called bibb or butter or lime stone and also buttercup.
I believe all these names are for slightly different types of this lettuce which are all part of the buttercup family.

This type of lettuce is somewhat delicate and can bruise easily.
The best way to work with the lettuce is to break off each individual leaf from the stem.

The next step is to tear each individual leaf into bite-size pieces.
Some people discard the white stem, I think it tastes just fine.

Place the pieces into cold water.
Gently push the lettuce into the water.
Remove the lettuce and place into a strainer to dry.
You can also use a salad spinner but again, be careful not to bruise the lettuce.
