Quinoa and Eggs

Ingredients:

4 or 5   Egg Whites
1/2       Cup
Mexi-Quinoa
1          tsp. Olive Oil
1          Pinch Salt and Pepper

Garnish:
Avocado
Salsa



Scramble egg whites together.

Mix in quinoa, salt and pepper.

Heat cast iron pan on the stove.



Rub oil evenly over the pan.

When oil is hot, add egg mixture.

Let eggs set-up in pan for a minute or so.



Place pan under hot broiler for a minute or so to cook the eggs.

Remove from broiler and serve.

You can fold it over as an omelet or eat it as is like a frittata.

You can also roll the eggs up in a tortilla or lavash like a breakfast burrito.

Be sure to serve with salsa and avocado.
