3 Cloves Garlic, large 1 Shallot, or half of a big one 2 Tbs. Olive Oil 24 Ounces Jumbo White Mushrooms, I found these at Costco 1 Cup White Wine 2 Tbs. Lemon Juice 2 Tbs. Tomato Sauce, canned or homemade 1 Cup Stock, chicken or vegetable 6 Sprigs Fresh Thyme 1/4 tsp. Ground Pepper 1/4 tsp. Salt, more or less depending on the stock
Peel garlic and shallot.
Place onto a cutting board and chop together.
Garlic-shallot mix can be rough chopped or minced fine, both work well in this recipe.
Use a damp towel to wipe any dirt off of the mushrooms.
Place cleaned mushrooms onto a cutting board.
Cut all of the mushrooms into quarters by slicing them in half and then in half again.
Gather & measure all of the remaining ingredients.
You will need to have them ready to go because this recipe proceeds quickly once the mushrooms start cooking.
Place a large pan over high heat.
Add oil and one mushroom quarter to the pan.
As the oil heats you will notice that the mushroom starts to sizzle.
When mushroom is sizzling well you know the oil is hot.
Add all of the mushrooms to the hot oil.
Resist the urge to stir them for one whole minute.
Allow the mushrooms to pick up some brown color.
After a minute, stir the mushrooms.
Use a spoon or kitchen tongs to flip over some of the mushrooms so they can begin to brown on the other side.
At this time you can add the garlic-shallot mix.
Stir the mix into the mushrooms and continue stirring for a quick 15 seconds.
Garlic-shallot mix will give off a wonderful aroma but be careful not to burn them.
At this time you can add the white wine to the pan.
The wine will stop the browning / burning process.
Let the wine boil with the mushrooms for half a minute.
Add remaining ingredients to the pan.
Stir everything together and bring to a boil.
Cover the pan and boil mushrooms for 3 minutes.
Remove the cover; remove the pan from the heat.
Allow the mushrooms to sit in the broth for at least fifteen minutes or up to an hour.
The longer they sit in the broth the more flavor they will pick up.
Serve the mushrooms hot in a bowl with some broth.
