If you look through my recipes you will see about half a dozen that are similar to this one. The reason being; oven roasted vegetables are quick, healthy and delicious. Once you have the vegetables cooking in the oven the rest of the meal is a snap. Add these vegetables to almost anything you have in the fridge like cooked grains or pasta to make a complete meal.
Ingredients:
1 Large Crown Broccoli 1 Small Head Cauliflower 1/2 Red Bell Pepper 1/4 Red Onion 1 Tbs. Olive oil, maybe a bit more but 2 tablespoons is too much 1 Pinch Salt and Pepper 1/4 Lemon, optional
Heat Oven To 400°
Cut broccoli and cauliflower into small florets.
Wash them off in plenty of cold water.
Drain well or spin dry.
The dryer the better.
Place into a mixing bowl.
Cut onion and pepper into long thin slices.
Add onion and pepper to the bowl.
Add oil, salt and pepper.
Toss and mix everything together.
Place ingredients onto a sheet pan.
Make sure everything is in one evenly dispersed layer.
In other words, do not crowd the vegetables together.
Roast in the oven for 18 to 20 minutes.
Broccoli will get a little brown and crisp around the edges which adds a great flavor to the dish.
Remove pan from oven and serve with a squeeze of lemon.
