Broiled Salmon

Turn oven broiler to high

Let broiler heat for five minutes

Ingredients:

1     Side of Salmon, 2 pounds
1/4  tsp. Salt
1/8  tsp. Ground Pepper
1/2  tsp. Garlic, dry, granulated
1/2  tsp. Oregano, dry, leaf
1     Serrano Pepper, sliced thin
1/2  Lemon, sliced thin
2     Tbs. Olive Oil


Directions:

Place a sheet of foil onto a sheet pan.

Rub one Tablespoon of oil over the foil.

Lay the salmon on the tray; rub with the remaining oil

Sprinkle the salmon with all of the spices.

Lay the lemon and serrano pepper over the fish.

Place salmon on the middle rack and broil for 10 minutes.

That's it!  Remove pan and serve.

Quick, easy, delicious and healthy. Broiled fish is always a great choice for dinner. You can match the salmon up with some rainbow chard for a quick mid-week meal. Any left over fish can be served cold for lunch.
