Broiled Shrimp Recipe #1 Cajun Shrimp Ingredients: 3-4 Jumbo Shrimp, 10-12 per pound 1 1/2 Tbs. Olive Oil 2 tsp. Cajun Spice Blend* * Cajun spice blends come in a variety of flavor profiels. They can be found in the spice section of the store. I use one called Cajun-Creole from Spiceland.
Cut shrimp from end to end with a small knife. Be sure not to cut all the way through. Remove dirt, sand and vein. Lay shrimp down and open to resemble a "butterfly" Place desired spice blend on a plate. Pull shrimp meat out of the shell, keeping tail attached. Rub shrimp meat in spice mix, both sides. Place shrimp back into shell.
Turn oven broiler onto high. Adjust oven rack to highest setting. Place shrimp on a sheet pan. Place pan on top rack under hot broiler. Broil shrimp for two and a half minutes. The meat should be just cooked, not overcooked. The shell may burn a bit, that's o.k. Remove from broiler and serve.
