Cajun Sweet Potatoes w/ Roasted Peppers

Heat Oven To 400°
Ingredients:
3 Pounds Sweet Potatoes 2 Tbs. Olive Oil, divided 4 tsp. Cajun Spice, divided 1/2 Red Pepper 1/2 Green Pepper 1/2 Yellow Pepper 1/2 Red Onion

Peel potatoes and cut into medium size pieces, about 3/4 of an inch.
Place potatoes into a mixing bowl

Drizzle one tablespoon of oil over the potatoes.
Sprinkle with 3 teaspoons ( 1 tablespoon) of spice.
Toss all ingredients together and place onto a sheet pan.

Cut peppers and onion into 1/2 inch wide slices.
Place slices into the same mixing bowl.
Drizzle with one tablespoon of oil.
Sprinkle with one teaspoon of spice.
Toss well to mix.

Place peppers and onion onto a sheet pan.
Note: If you don't have three different color pepper you can just use one color or two.

Place the sheet pan of potatoes and the sheet pan of peppers into the oven at the same time.
Set the timer for 20 minutes.
Remove the peppers after 20 minutes and let the potatoes continue cooking for another 10 to 15 minutes, or until they are cooked soft.

While potatoes continue to cook, remove the peppers from the tray and chop into small bite-size pieces.
When potatoes are finished cooking add the peppers to the potato tray and mix everything together.
Serve hot, warm or cold.
Can be garnished with some chopped herbs and a squeeze of lime juice.
