Cajun Catfish
w/ Avocado & Orange Salsa

also works great with Mahi-Mahi, Sea Bass, & Pacific Halibut




Ingredients:

1     Orange,
segmented
4     Tbs. Red Onion, sliced thin
1/2  Avocado, diced
2     Tbs. Cilantro, chopped
3     Tbs. Lime Juice
1     Tbs. Olive Oil
1     Pinch Salt and Pepper

2     Fish Filets, 6 oz. each
1     Tbs. Olive Oil
1     Tbs. Cajun Spice Blend






Place first seven ingredients into a mixing bowl.

Mix well and reserve while grilling fish.




Drizzle oil over fish.

Rub oil evenly over both sides of the fish.



Sprinkle spice mix generously over one side of the fish.


To grill fish:

Fish can be grilled directly on the grates of your bbq grill.

You can also use a cast iron griddle plate if you are having trouble with fish sticking or breaking up on the grill.

To use the griddle plate you need to heat it for about twenty minutes before using.

Place the fish on the griddle plate or grill and cook for about three minutes on each side.

Remove the fish from the grill and garnish with the avocado & orange salsa
