3 Pounds Chicken Legs, also works great with turkey legs 1 Tbs. Olive Oil 1 Tbs. Your Favorite Spice Rub, could be bbq spice blend, cajun rub, steak seasoning, chili powder or any spice combination
Equipment: 3 long 18 inch metal skewers 2 Bricks
Rinse off chicken in cold water.
Let the legs drain, you can use paper or cloth towels to dry the off.
Dried chicken will cook-up nice and crisp.
Place chicken onto a large platter.
Drizzle oil over the legs.
Sprinkle with some spices.
Rub the oil and spice into the chicken.
Place legs into a straight line.
flip over every other leg so that they look like the photo.
Take a long metal skewer and run it through the bottom of each leg.
Run another skewer through the meatiest part of the leg.
Sprinkle more spices over the chicken.
Light your bbq, you will need very high heat.
Place a cast iron griddle or sheet pan over the grates.
Place a brick at each end of the griddle.
Lay the chicken skewers on top of the bricks.
The chicken should be suspended over grill.
Close the lid and roast for about 45 minutes.
Check the legs from time to time.
You can brush the legs with bbq sauce when they are almost finished, if you like.
