Chipotle Salsa

Ingredients:
1 Can Diced Tomatoes, 28 oz.
2 Cloves Garlic
2 Chipotle Peppers
1/2 Bunch Cilantro
1/2 Red Onion, medium size,chopped
1/4 tsp. Salt
2 Tbs. Lime Juice
1 Tbs. Red Vinegar

Place garlic into processor.
Run for a few seconds to chop the garlic.
Add all other ingredients.
Pulse machine until you have the style of salsa that you like. You can make it chunky, smooth, or somewhere in between. The Photo on the top of the page is mostly smooth with a few chunky onions and tomatoes for texture.

New Taste Thinking:
Oh...If only tortilla chips were not so fattening. I like to use this salsa as a condiment for fish, rice and grains.  It is great to have in the fridge for those times when something needs a little kick!
