Let chicken sear on one side until it starts to turn brown.
Turn chicken over and brown the other side.
Add the whole recipe of chipotle salsa to the pan.
Turn heat down and gently simmer the chicken for 20 minutes, stirring from time to time.
Remove chicken from the stove.
Let chicken soak in the sauce for at least a half hour.
Gently warm chicken and serve.
Do not boil the chicken in the sauce as this will make the meat tough and dry.
New Taste Thinking:
Here is yet another delicious chicken recipe. The chipotle salsa adds a nice freshness to the dish. I would serve this recipe over a rice or grain dish to soak up the sauce. You can also cut the chicken into much smaller pieces and use the same recipe to make a chicken taco/burrito filling.
