Chopped Salad w/ Ranch Dressing

Ingredients:

2      Heads Romaine Hearts


Cut romaine into small 1/2 inch dice.

Wash lettuce and dry in salad spinner.

Let lettuce crisp-up in the fridge for a few hours if possible.

Ingredients:

1      Avocado
1      Carrot
1      Red Pepper
1      Tomato
1/2  Cucumber
3      Green Onions
1/2   Cup Garbanzo Beans
1      Full Recipe
Ranch Dressing




Peel and dice cucumber.

Dice red pepper and tomato.

Grate carrot in box grater.

Peel and dice avocado.

Slice green onions.



If using canned garbanzo:

Measure, rinse and strain dry.




Place chilled lettuce into a mixing bowl.

You should have about 5 or 6 cups of chopped lettuce.



Place all ingredients in bowl with lettuce.

Grind some fresh pepper over the ingredients.

You may also want to add a small pinch of salt.

Toss everything together and serve.

Salad yields 3 entree size portions or 6 regular salad size portions.

New Taste Thinking:

This salad makes a great lunch or dinner entree. Dice up a bit of cooked lean protein such a chicken breast or poached shrimp and toss with the other ingredients if you like.
The thing that I love about this salad is how the creamy ranch dressing brings all of the ingredients together.
At 45 calories per ounce you will find lots of uses for this healthy, delicious salad dressing.
Here is one that works for me:
Dip the
garlic potatoes in the ranch for a fun appetizer.
