Chicken & Fruit Salad
w/ Whole Wheat Couscous & Kiwi-Honey Yogurt Dressing

Ingredients:

2     Cups Whole Wheat Couscous
2     Cups Water
20   Grapes, any color, seedless
1     Orange
1     Apple
2     Tbs. Sunflower Seeds, roasted, salted
1     Tbs. Olive Oil
1     Cup Yogurt, plain, low fat
1     Kiwi
1     Tbs. Honey
1     Tbs. Lime Juice


 


Bring 2 cups of water to a boil.

Add couscous and mix a few times.

Cover pan and remove from the heat.

Let couscous cook in the pan for 5 minutes.



After 5 minutes, remove the cover.

Mix couscous a couple of times and let cool for half an hour in the same pan.

When couscous has cooled, place it into a large mixing bowl.

Use your fingers to break-up and fluff the grains.



Wash and slice the grapes.

Peel and slice the orange. (see below)

Dice the apple.



Use a small knife to cut all of the skin from the orange.

Cut the orange in half, tip to stem.

Cut each half in half again.

Slice orange into thin quarter sections as shown in photo.



Add cut fruit to the bowl with the cooked couscous.

Add oil and sunflower seeds to the bowl.

Mix and toss ingredients together.



Place yogurt, kiwi, honey and lime juice into a blender and puree.



As for the chicken, I like to use leftover
roasted chicken breast.

To serve:

Place couscous salad onto a plate.

Cover salad with sliced chicken and serve with Kiwi-Honey sauce on the side.
