Citrus Gazpacho

Blender Ingredients:

4     Cups Tomato Juice
2     Cups Orange Juice, fresh
3     Tbs. Lime Juice
1     Tomato,
peel and seed
1/2  Cucumber, peel and seeds removed
1/2  Serrano Pepper, or less
1     Green Onion
1     Clove Garlic, chopped
2     Tbs. Red Vinegar
1/8  tsp. Salt

 




Gather, slice, peel and chop all blender ingredients.

Puree all blender ingredients in the blender.

Place puree into a large mixing bowl.

Garnish Ingredients:

1/2   Cucumber, peel, seed, dice
1/2   Red Pepper, small dice
1      Grapefruit,
segmented 
1      Orange, segmented*

Cut orange and grapefruit segments into medium size pieces.



Mix garnish ingredients with pureed blender ingredients.

Gazpacho is now ready to eat.

It can also be placed in the fridge for a few hours or overnight.




Garnish Ingredients #2

Avocado
Green Onion
Cilantro Leaves


Place ingredients into serving bowl as seen in photo.

Ladle gazpacho over garnish and serve.
