Chilled Oven Poached Salmon......

......with Mustard-Dill Glaze

 ......with Mustard-Dill Glaze, Cucumber Salsa and Avocado



Yields 8 Servings

Heat Oven To 350°

Ingredients:

1    Salmon Side, about 3 pounds, boneless, skinless*
1    Tbs. Olive Oil
2    Cups Water
1    Pinch Salt and Pepper


*Salmon can also be cut into smaller single serving portions

Place a piece of foil onto a sheet pan.

Rub oil over the foil.

Place salmon onto the foil.

Sprinkle w/ salt and pepper.

Pour water into the sheet pan.




Place pan in oven and bake for around 25 minutes.

Salmon should be cooked but not overcooked.

A little pink in the center is fine for most people.


Remove and check for doneness by inserting a fork in the thickest part of the salmon.

Open up a small hole in the meat and look inside to see if salmon is cooked to your liking.

Some people like the salmon cooked all the way through.


Let salmon cool for a while and serve or let cool, wrap and place into the fridge for a few hours and then serve.

Garnish with Dill-Mustard Glaze and
Cucumber Salsa



Mustard-Dill Glaze


Ingredients

3    TBS. Dijon Mustard
2    TBS. Maple Syrup
1    tsp. Red Vinegar
1/2  tsp. White Vinegar
1    TBS. Dill, chopped

Place all ingredients into a bowl and mix.

Can also be made in a blender or food processor.
