Southwestern Corn and Feta Salad w/ Chipotle-Lime Dressing

Ingredients:
1 Cup Red Onion, small dice 1 Green Pepper, small dice 1 Pound Corn Kernels, frozen, thawed 1 Tomato, small dice
1 Zucchini, sliced thin rounds 1 Ounce Feta Cheese, crumbled
| Dressing:
4 Tbs. Lime Juice 2 Tbs. Olive Oil 1 Tbs. Red Vinegar 1 Chipotle Pepper, minced 1/4 Cup Cilantro, chopped 1/2 tsp. Salt 1/4 tsp. Garlic Powder 2 tsp. Cumin, ground

Turn broiler on high.
Place sliced zucchini onto a sheet pan.
No oil or seasoning needed.
Broil zucchini on one side only.
Remove pan from oven and let cool.

Gather and measure onion, pepper, corn, zucchini and tomato.
Place ingredients into a mixing bowl.

Gather all ingredients for the dressing.
Mince chipotle pepper and chop cilantro.
Mix all ingredients together.

Add dressing to the bowl and mix everything together.
To Serve:
Place a scoop of the salad onto a plate and crumble a teaspoon of feta cheese over the top.
