Caesar Salad Salad

With Crispy Lavash & Gorgonzola


Ingredients:

2      Small Romaine Lettuce Hearts

Dressing:
2      Cloves Garlic
3      Anchovy Filets
1      Tbs. Dijon Mustard
1      Tbs. Grated Parmesan Cheese
1/8    tsp. Salt
1/8    tsp. Pepper
2      Tbs. Lemon Juice
2      Tbs. Red Wine Vinegar
4      Tbs. Olive Oil


Garnish:
1      Green Pepper
1      Cucumber
1      Avocado
30   Tear-Drop Tomatoes
2      Tbs. Sliced Red Onion
1      Sheet Whole Wheat Lavash (from Trader Joe's)
1      Sprinkle Gorgonzola



Two nice romaine lettuce hearts.


Cut lettuce into medium-large size pieces.

Wash lettuce in cold water.

Spin-dry lettuce and place into a bowl.

Cover and place bowl into the fridge to chill and crisp for a few hours.



Gather and measure all dressing ingredients.



Place all dressing ingredients, minus oil, into a food processor.


Run food processor for a quick half minute.

All ingredients should grind into a fine puree.



While machine is still running slowly drizzle oil into the dressing.

Turn off processor when all oil has been absorbed into the dressing.



Use a rubber spatula to remove all of the dressing from the bowl of the processor.

Heat oven to 375 degrees.

Place lavash directly onto an oven rack for about five minutes.



Remove lavash and break into small pieces.

Dice and slice all vegetables into medium size pieces.

Add vegetables and all dressing to the lettuce bowl.

Use clean hands to toss salad.

Portion salad into serving bowls and garnish with broken lavash and grated gorgonzola

You will love the big bold flavors of this salad. Lots of crunchy vegetables and creamy Caesar dressing all tossed together. You can enjoy this salad all by itself for lunch or dinner. Try serving it with a few ounces of grilled steak or seafood. Cut the lettuce in the morning and stop off on the way home to pick up a rotisserie chicken for a quick healthy dinner.
