Cucumber-Chipotle Guacamole

Ingredients:
2 Avocados, medium size 2 Chipotle Peppers, canned 1 Tbs. Lime Juice 1 Pinch Salt
1/2 Cucumber 1/2 Red Pepper 2 Tbs. Red Onion, small dice 1 Tbs. Cilantro. minced 1 Tbs. Olive Oil 1 Tbs. Red Vinegar

Peel cucumber and cut in half.
Use a spoon to remove the seeds.
Dice the cucumber into small pieces.

Dice red pepper and onion into small pieces.
Wash, shake dry and mince the cilantro.

Cut avocado in half.
Remove the seed and scoop flesh out from the skin.
You can also cut avocado into quarters and peel the skin off.

Place avocado, chipotle, lime juice and salt into a food processor.
Run the machine and turn ingredients into a smooth puree.
Remove avocado puree from the processor and place into a bowl.
Add chopped vegetables, vinegar and oil.
Mix together, may need a touch more salt, and serve.
