Curried Chicken Salad Wrap

Ingredients:

1/4   Cup Plain Yogurt, any
1      Tbs. Yellow Curry Powder


Mix yogurt and curry together; Reserve

1      Celery Stalk, small dice
1      Green Onion, sliced thin
1      Apple, small dice
3      Tbs. Currents or Raisins
1/2   Red Pepper, small dice
1/4   Cup Cilantro, rough cut




1    Pound Cold Chicken, medium dice
1    Tbs. Olive Oil


Cut chicken and drizzle with oil.



Place all ingredients:
yogurt-curry, diced vegetables/fruit and chicken into a mixing bowl.

Mix well and reserve.

Ingredients for each wrap:

1     Tbs. Plain Yogurt
1     Sheet Whole Wheat Lavash
1     Cup Curried Chicken Salad
1/2  Tbs. Toasted Sunflower Seeds, salted
1/2  Cup Baby Spinach, raw, clean


Cover lavash evenly with yogurt.



Cover lavash and yogurt evenly with chicken salad.

Sprinkle sunflower seeds over the chicken salad.



Cover everything with a thin layer of spinach.

Roll wrap; Slice in half and serve.
