I refuse to buy those bleached out boneless, skinless chicken breasts that they sell at the grocery store. The are so small and sad looking that purchasing them for dinner is like punishing yourself for being hungry. I prefer to pick out big, meaty chicken breasts that are on the bone. I cut them myself and they are always delicious. If you don't know how to cut the meat off of the chicken breast that is even better. All you need to do is slice across the top of the chicken breast to get yourself a nice six ounce filet. The more meat you leave on the bones the better it is for you because they make a wonderful meal the next day. Simply season them and grill or broil.
You can grill the rib meat at the same time as you grill the breast meat. You can season the with a bit of salt, pepper, oregano, garlic and lemon.
