Baked Eggplant w/ Spicy Pizza Sauce
serve hot or cold
2 Eggplant, about one pound each
1 Tablespoon Olive Oil
1 Pinch Salt and Pepper
2 Ounces Mozzarella Cheese, fresh
1 Tablespoon Grated Parmesan Cheese
Spicy Pizza Sauce
Heat oven to 450°
Slice stem off of eggplant.
Cut eggplant in half.
Brush oil over eggplant flesh; season with salt and pepper.
Place eggplant into oven; roast for 25 minutes.
Remove eggplant from oven.
Turn oven off and turn broiler onto high.
Press eggplant with a large spatula to flatten.
You can skip this step if you like.
Place eggplant onto a sheet pan.
Dice or shred the mozzarella cheese.
Spread 3 tablespoons of sauce over each eggplant.
Add 1/2 ounce of mozzarella over the sauce.
You can use less or no cheese if you prefer.
Sprinkle with a teaspoon of parmesan cheese.
Place eggplant about eight inches away from the broiler.
Broil the eggplant for about five minutes.
Cheese will melt and begin to brown.
Remove eggplant from broiler.
Garnish with some sliced basil or chopped parsley and serve.
