I love cooking at the local Farmers Market. People are so friendly and the vegetables are amazing! This is a dish that I did yesterday and have had a number of comments and questions. Here are the easy to follow step-by-step instructions.
This recipe is another example of using technique to make something healthy. The eggplant will absorb as much oil as you put into the pan. The concept of just searing the eggplant in 2 tablespoons of oil and then steam cooking it in wine and the juice from the tomato makes this a healthy and delicious New Taste recipe.
Ingredients:
2 Tbs. Chopped Garlic, about 7 cloves 2 Cups Minced Fresh Tomatoes, about 4 or 5 1 Large Eggplant, this one weighs a pound and a quarter 2 Tbs. Olive Oil 1/2 Cup White Wine 7 Leaves Fresh Basil 1 tsp. Oregano, dry or fresh 1/2 tsp. Salt 1/2 tsp. Crushed Red Pepper
Slightly smash and peel the garlic.
Chop garlic and reserve until needed.
Rinse and dry the tomatoes.
Remove the stem and core.
Cut tomatoes into thin round slices.
Cut slices across into long thin pieces.
Chop and mince tomatoes into tiny pieces.
Chop enough tomatoes to fill two cups.
Reserve tomatoes until needed.
Gather and measure all remaining ingredients.
Rinse and dry the eggplant.
Cut off a little bit of the stem and tip.
You can peel the eggplant or leave the skin on.
I like to peel only some of the skin off.
Slice the eggplant into half inch thick circles.
Cut each piece into half inch squares.
They don't have to be exact.
Heat a large pan on the stove.
Add the olive oil.
Oil should get hot but not smoking hot.
Add eggplant and garlic to the pan.
Mix and cook for a quick half minute.
Add wine to the pan,
Wine will stop the garlic from scorching.
Slice basil into thin pieces.
Add all ingredients to the pan.
Mix and stir all ingredients together.
Bring ingredients to a boil.
Cover pan, cook over high heat for seven minutes.
You will need to stir the ingredients every few minutes.
After seven minutes remove pan from the heat.
Keep pan covered for another few minutes to allow the eggplant to finish cooking.
