Mini Golden Flax Biscuits

Yields 9 biscuits
Ingredients:
1 Cup Golden Flax Seed Meal 1/4 Cup Water 1 teaspoons MCT Oil 1 teaspoon Baking Powder 1 Whole Egg 2 Egg Whites 2 teaspoons Xylitol (natural sweetener) 1/3 teaspoon Salt
Garnish: 1 teaspoon Flax Seed, brown 1 teaspoons MCT Oil 1 teaspoon Xylitol

Golden flax seed meal can be found in the refrigeration section of the grocery or health food store.

Heat Oven To 375°
Place first 8 ingredients into a mixing bowl.

Use a small whisk to mix ingredients.
Make sure to brush over the sides and bottom of the bowl as you mix.

Pour a tiny drop of oil into each of 9 muffin cups.
Use your finger to spread oil evenly around the cup.
Sprinkle a tiny amount of xylitol and brown flax seed into each cup.

Place two tablespoons of batter into each cup.
You can use your fingers to get the batter out of the spoon.
Note: This spoon is a two tablespoon measure.

Moisten your hands with cold water and use your fingers to spread the batter out evenly in the muffin cup.
(Never had a recipe that called for using your fingers three times!)

Place muffin pan into hot oven; bake for 13 minutes.
Remove the pan and let biscuits cool in the pan for ten minutes.
Remove biscuits and serve.
