Mini Golden Flax Biscuits #2
for breakfast and snacking



Ingredients:

1      Cup Golden Flax Seed Meal
2      Tbs. Soy Flour
1      Tbs. Cornmeal, medium grind
1      Tbs. Almond Meal
1      Tbs. Honey
1      Whole Egg
2      Egg Whites
6      Tbs. Buttermilk
2      tsp. Whole Flax Seed, brown of golden
1      tsp. Baking Powder
2      tsp. Olive Oil
1/3   tsp. Salt

Garnish:
1      Tbs. Whole  Flax Seed, brown or golden


Heat Oven To 375°


Golden Flax Seed Meal can be found in the refrigerated section of your grocery or health food store.


Measure out all of your dry ingredients.

Place dry ingredients into a mixing bowl.

Use a small whisk to mix them together.



Place all remaining ingredients, minus the garnish, into the mixing bowl.


Mix all ingredients together to form a batter.

Be sure to brush the sides and bottom of the bowl as you mix



Lightly oil a 12 muffin pan.

Sprinkle the flax seed garnish evenly among the 12 empty cups.



Fill a two tablespoon scoop or spoon with the batter.


Place 2 tablespoons of batter into each cup.



Moisten your hands and use your fingers to flatten-out and dispense the batter evenly in the cups.

Place muffin pan into the hot oven and bake for 14 minutes.


Remove cooked biscuits and let cool in the pan for 10 minutes before serving.
