4 Ounces Baby Lettuce, single variety or mixed 1 Avocado 2 Blood Oranges 10 Cherry Tomatoes 2 Tbs. Toasted Sunflower Seeds 2 Tbs. Olive Oil 1 Tbs. Red Vinegar, or other favorite 1 Pinch Salt and Pepper
I found this beautiful Baby Red Leaf Butter Lettuce at the farmers market today.
You can subtitle another variety or a spring mix if you like.
Gently pull the leaves from the stems.
No need to cut anything.
Wash lettuce in the salad spinner, if you have one.
You will need to change the dirty water a few times if the lettuce was grown in the ground, as opposed to being hydroponic grown.
Spin dry the clean lettuce.
Place clean, dry lettuce into a mixing bowl.
Cut cherry tomatoes in half.
Peel and slice avocado.
Cut the skin off of the oranges and slice thin.
Place most of the avocado, tomato, orange and seeds into the bowl.
Save a little of each to garnish the salad.
Add the oil, vinegar, a sprinkle of salt and a few grinds of black pepper.
Toss ingredients together; garnish and serve.
New Taste Thinking:
Sometimes when you are walking the farmers market and are not sure what to buy, just grab some lettuce. Once you have lettuce all you need is a few more items to make a great salad.
Items that can go into your salad are endless. Almost any combination of fruit, vegetable & nut will work. Fruit can be fresh or dried. Vegetables can be raw or cooked. Also try different flavored oils and vinegars.
