Bake potatoes for about an hour at 450°.
They can be cooked in the oven or out on the grill.
Potatoes should be cooked firm and not over-cooked.
Let them rest for 10 minutes after cooking.

Using a sharp knife, carefully slice each potato in half and then cut each half into a quarter.
Let potatoes air dry and cool for another 15 minutes.

You will need 2 tablespoons of olive oil for each potato.
Place 2 tablespoons of oil into a cast iron pan.
Place pan over medium, not high, heat.
When oil is hot add 4 pieces, flesh side down, to the pan.
Potatoes will be gently sizzling in the pan.
Cook on each of the flesh sides only for about 4 or 5 minutes a side, until golden brown.
Remove from pan and sprinkle with a touch of salt and pepper.
Repeat with the other potato.
2 potatoes will make. 4 portions.
