4 Ounces Snow Peas 1 Carrot, sliced thin 4 Ounces Mushrooms, sliced, any 4 Cups Cilantro-Lime Brown Rice 1 Tbs. Soy Sauce 1 Green Onion, sliced thin
Gather and prepare garlic, ginger, shallot and red pepper.
Slice carrots in half lengthwise.
Slice halves into thin, half circle pieces.
Clean snow peas [see below]
Cut or break snow peas in half
Very Important:
Clean snow peas by breaking off the very tip of the stem and pulling off the attached string.
Clean and slice mushrooms.
These are Golden Beech mushrooms.
You can uses any mushroom for this recipe.
Fill a large pan with one inch of water.
Bring to a boil; Add carrots and snow peas.
Bring water back to a boil for only a few seconds.
All you want to do is take the rawness out of the vegetables.
Strain out the water and vegetables.
Wipe pot dry and place back on stove.
You can spray a little cold water on the vegetables to stop them from cooking any further.
Place cilantro-lime rice into a bowl.
Add soy sauce and mix well.
Place in microwave, if you have one, for a couple of minutes to warm before adding to the pan.
Note: This is a great way to use up old, cold rice or even grains that have been in the fridge for a while!
Working over high heat:
Add peanut and sesame oils to hot pan.
Wait a few seconds for the oil to heat.
Add garlic, shallot, ginger and red pepper to the pan.
Cook and stir for a quick 15 seconds.
Add mushrooms to the pan.
Cook and stir for about 30 seconds.
Add chicken to the pan.
Cook and stir for another 30 seconds.
Add vegetables to the pan.
Cook and stir for 30 seconds.
Add rice to the pan.
Cook and stir until rice is hot.
Remove fried rice from the pan and place on a serving platter.
Sprinkle with green onion and serve.
New Taste Thinking:
Fried rice is the ultimate "clean out the fridge" meal. You can add any number of vegetables to this recipe. You can omit the chicken or add any other protein that you may have on hand. Most fried rice dishes call for an egg to be added at some point in the recipe. I don't think that it is necessary but feel free to do so if you like. You may notice that this recipe calls for much less oil than the typical fried rice recipe.
