3 Bananas, very ripe 1/2 Cup Shredded Coconut, unsweetened 1/2 Cup Grated Chocolate, unsweetened 2 Tbs. Agave or Honey or Maple Syrup
Place bananas and coconut into a bowl.
Use a whisk or fork to mash them together.
The mixture should be a little chunky.
Do not over-mash the banana.
Scoop and drop 2 tablespoons of the mixture onto a large platter.
Repeat until all of the mixture is used up.
Place the platter into the freezer for an hour or so.
Place grated chocolate into a bowl.
Add sweetener: agave or honey or maple...
When banana mixture is frozen, place the chocolate-sweetener mixture into a microwave and heat for 25 seconds.
Remove the bowl from the microwave.
Use a spoon to mix the chocolate and sweetener together.
Dip each frozen banana portion into the melted chocolate.
Use the spoon to smooth the chocolate over the top.
Place chocolate covered portions back onto a plate and put back into the freezer for another hour or so.
When they are frozen solid you can put them into a freezer bag or container until needed.

This is a great recipe to make with kids, yours or someone else's. It is also a great snack for kids because it looks and tastes like something special, which it is! As for adults, it is a great option when you are thinking about reaching for that pint of premium ice cream. The chocolate mixture may seem a bit different than what you may have seen on other dipped items and that is because this one is made without oil or heavy cream, by design. Please note: If you don't like coconut you can substitute a quarter cup of chopped walnuts or pecans.
