Pan Broiled California White Sea Bass
with garlic and lemon

Ingredients:

1      Large Filet Of Sea Bass, this one is about 1 1/3 pounds
1      Tbs. Crushed Italian Spice Blend, basil, oregano, thyme, rosemary, salt, pepper, garlic powder
2      Tbs. Whole Wheat Flour, white
2      Tbs. Olive Oil
5      Cloves Garlic, rough chop
1      Lemon

This recipe works with any kind of large fish filet

Heat Oven To 400°

Here is a beautiful piece of sea bass.

Make sure fish is boneless.

Place flour and spices into a shallow bowl.

Toss them together.

Rub and press the spice-flour mix into the fish.

The natural moisture of the fish will help the ingredients adhere to all sides

Peel and rough chop the garlic.

Add oil and garlic to a pan.

The best pan for this is a black cast iron.

Turn oven off and turn the broiler onto high.

Place fish into the cold pan.

Turn heat to medium-high.

Let pan heat until you can hear the garlic sizzle.

Let fish cook for just a few seconds.

Gently turn the fish filet over.

Place pan into the oven on an upper-middle shelf under the hot broiler.

Broil the fish for 4 to 5 minutes.

Remove fish from the oven and turn over again.

Place fish back into the oven and broil for another
4 to 5 minutes.

Remove pan from oven and check to see that the fish is cooked to your liking.

Remove fish from pan and place onto a serving platter.

Squeeze lemon into pan; mix to make a thin sauce.

You may want to pick out and discard some of the burnt garlic pieces.

You can also add some capers and chopped herbs if you like.

Pour sauce over the fish and serve.
