Ingredients:
1 Green Pepper, small dice 1 Red Pepper, small dice 1/4 Red Onion, small dice 1 Tomato, small dice 1 Cucumber, peel, small dice 3 Cups Water
3 Tbs. Lemon Juice 3 Tbs. Red Vinegar 2 Tbs. Olive Oil 2 Cloves Garlic 1 tsp. Salt 1/2 tsp. Crushed Red Pepper 1 Large Avocado, or 2 medium

Place diced green pepper, red pepper, onion, tomato and cucumber into a medium size bowl.
Add water to the bowl and cover with foil or lid.
Place bowl in the fridge and let chill for 6 to 8 hours.

After the vegetables have chilled:
Gather and measure all other ingredients.
Peel avocado and garlic; squeeze lemon juice.

Place lemon juice, vinegar, oil, salt, pepper, garlic and avocado into a food processor or blender.
Take the chilled vegetables out of the fridge.
Pour a cup or two of the chilled vegetable water into the processor bowl or blender cup.
Puree all these ingredients together.

Pour the avocado puree over the chilled vegetables.
Mix all ingredients together and serve.
