Ginger Crust: 1 Bunch Green Onion 5 Cloves Garlic 2 Ounces Ginger, peeled 1/2 Serrano Pepper 1/2 Bunch Cilantro 1/4 Cup Olive Oil Salt and Pepper
Place ginger crust ingredients on cutting board.
Rough cut the ingredients to get started.
Continue to chop and chop for a few minutes.
Chop until all ingredients are finely minced.
Remove ingredients from cutting board.
Place into a clean dish towel.
Wring out all of the liquid from the chopped herbs.
Place ingredients into a bowl.
Add olive oil to ginger crust.
Mix oil and crust together.
Salt and pepper salmon.
Rub mixture onto one or both sides of fish.
Cook fish on griddle, as shown.
You may also grill fish on a standard BBQ grill.
New Taste Thinking: I Love cooking on the griddle.I see it as pan frying without the oil. You can find an 18 inch griddle at any hardware store for around thirty dollars. This ginger crust works great on other fish such as tuna, swordfish, sea bass and also shrimp. You can also follow the same recipe and substitute thinly pounded scallopini of chicken or pork. No need to add any sort of sauce or salsa to this recipe as the ginger crust is full of great flavor.
