Ingredients:
1 Bunch Carrots 1 Tbs. Olive Oil 1 tsp. Ground Cumin 1 Pinch Salt and Pepper 1 Recipe Lime-Ginger Glaze
Wash and dry carrots.
Cut off the tops.

Heat Oven To 350°
Place carrots onto a foil lined pan.
Drizzle with oil; sprinkle with cumin, salt & pepper.
Roll carrots around in the oil & spices to coat.

Roast carrots in the over for 25-30 minutes.
Remove from the oven and cut a little piece of carrot to make sure it is cooked through.
Place carrots onto a serving platter and spoon the glaze over the top.
Sprinkle with any sort of chopped fresh herb such as parsley, dill, basil or cilantro, optional

You can make the glaze when the carrots are cooking or when they are ready as it only takes a couple of minutes.
If you reduce the glaze too much and it dries out, just add a bit of water to bring it back.
