Ingredients:
1 Avocado, Hass, medium or 1/2 Avocado, Reed, large (photo)
1 Tbs. Olive Oil 2 Tbs. Lime Juice 1 Pinch Salt and Pepper

The Reed avocado is a local favorite here in California.
This avocado is huge and buttery with a delicious nutty flavor.
In this green butter recipe you only need half of a Reed avocado or you can use a whole medium sized Hass avocado.
Avocados need to be fully ripe or slightly over-ripe.

Cut avocado in half.
Remove the seed and skin.
Place avocado half and all other ingredients into a small bowl.

Use a whisk to smash and whip the avocado into a smooth puree.
This can also be done in a food processor.
Place puree into a small serving bowl.
Cover bowl and refrigerate until well chilled.
Serve green butter with whole grain bread, tortillas and muffins.
