Ingredients:
1 Sweet Potato 1 Tbs. Olive Oil 1 Pinch Salt and Pepper

Rinse, dry and peel potato.

Cut potato into 1/8 inch round slices.

Place potato into a large mixing bowl.
Add oil, salt and pepper.
Toss and mix ingredients together.
Make sure each slice is covered with a touch of oil.

Heat bbq grill.
You can cook potatoes directly on the grill or you can place a cast iron grill directly onto the grates as seen in this photo.
Let grill heat for about 15 minutes.
Place potatoes onto the grill.
Cook for about four minutes.

Flip potatoes over and grill for another four minutes or so.
Potatoes will become soft and cooked through.
You can bite into one slice to test for doneness.
Remove from heat and serve.
You can serve plain or garnish with any kind of salsa such as the Pineapple-Tomatillo.
