Easy Grilled Vegetables


Ingredients:

1      Zucchini
1      Yellow Squash
1      Eggplant
1      Red Pepper
1/2    Red Onion
1      Tbs. Olive Oil
1      Bunch Rosemary, if you have it

Pinch Salt and Pepper



Wash and dry vegetables.

Cut zucchini and yellow squash into long slices.



Cut red pepper, onion and eggplant into round pieces, about a quarter to a half an inch thick.

Brush a tiny bit of oil over one side of each of the vegetables and sprinkle with a touch of salt and pepper.

Brush rosemary over the vegetables.

Rosemary will add a bit of flavor to the vegetables.



Grill vegetables for a couple of minutes on each side.

Note:
I like to place my cast iron grill over the grates of the BBQ grill.

Cook over high heat and let the griddle get nice and hot before cooking the vegetables.




Grill all vegetables and serve.
