Broiled Halibut Filet.....

Ingredients:
1 Pound Halibut Filet, or other fish 2 Cloves Garlic 1 Green Onion 1/2 tsp. Oregano, dry 1/4 tsp. Black Pepper, ground 1/4 tsp. Salt 2 Tbs. Olive Oil 1 Jalapeno Pepper 1 Lemon or Lime 2 Cups Veracruzana Sauce

Peel and chop the garlic.
Slice the green onion thin.
Add olive oil and mix garlic, onion, salt, pepper and oregano into a wet spice rub.

Here is a photo of a nice filet of California Halibut.
This is a very fresh, tasty, sustainable fish.
You can also use almost any other kind of fish such as snapper, mahi or salmon.
This preparation is also great with whitefish, with or without the veracruzana sauce.
Just make sure that your fish is totally boneless and skinless.

Place a sheet of foil over a sheet pan.
Lightly oil the foil and place the fish onto the pan.
Pour wet spice rub over the fish and spread it out evenly across the fish.
Slice a jalapeno pepper and a lime very thin.
Cover the fish with as much of the pepper as you wish.
Lay the lime slices next to the fish.
Heat the broiler in your oven to high.
Place the pan on an oven rack about eight inches from the heat element.
Broil fish for about ten minutes.
Remove fish from broiler and check to make sure it is fully cooked.
Place fish and broiled lime slices onto a serving platter.
Heat sauce and pour over the fish.
