Ingredients:
1 Chicken, cut in 1/4's 1 Tbs. Olive Oil 1 Lemon 1 Tbs. Oregano, dry 1 Tbs. Granulated Garlic, dry 1/2 Tbs. Rosemary, dry 1/2 Tbs. Black Pepper, coarse grind 1/2 tsp. Kosher Salt

Mix oregano, garlic, rosemary, pepper & salt.

Cut, rinse and pat dry the chicken.
Place chicken into a baking dish.
Squeeze lemon & drizzle oil over chicken.
Rub oil and lemon into the chicken.
Sprinkle spices over the chicken; both sides.
If chicken is large (4#) you will need most of the spice blend, smaller chickens use less.

Place a cast-iron griddle onto the grill.
Use the flat side to cook the chicken.
Heat grill to medium-high, about 425°
Close the lid and let grill and griddle heat for 15 minutes.

Place chicken onto the hot griddle.
Close the lid and let chicken roast for half an hour.
You can check on it once or twice during that time.

Chicken will take 30 to 45 minutes, depending on the size and the temperature of the grill.
Use a thermometer to check for doneness.
The chicken should be cooked to 160°.
