Kasha And Root Vegetable Hash

Ingredients:

1      Recipe
Root Vegetable Hash
2      Tbs. Olive Oil
10    Mushrooms, white
2      Cups
Cooked Kasha
1      Tbs. Lemon Juice
1/4   Cup Flat Leaf Parsley
1      Pinch Salt and Pepper



Prepare one recipe of root vegetable hash.

Let hash cool off before making this recipe.

Can be done a couple hours ahead of time.



Here is one full recipe of cooked kasha.

This recipe calls for 2 cups.

This is a good way to use up extra kasha that you may have made for
breakfast.



Heat Oven To 350°


Use a damp towel to wipe any dirt off of the mushrooms.

Slice mushroom thin.

Heat oil in a large pan.

Add mushrooms; cook and stir for a few minutes.

Mushrooms will turn golden brown.



Add vegetable hash to the pan.

Cook and stir for a minute or so.



Rinse, shake dry and rough chop parsley.


Add parsley, kasha, and lemon juice to the pan.

Sprinkle with salt and pepper.

Mix ingredients together and let cook for a few seconds.

Place pan into the oven and bake for 20 minutes.

Remove pan from oven and serve.
