Mediterranean Kasha Salad

Ingredients To Gather:

6     Cups    Cooked Kasha
1/4  Cup      Kalamata Olives, chopped
1     Can      Garbanzo Beans, 14 oz., rinsed
3     Tbs.      Dill, fresh, chopped
1/2  tsp.       Oregano, dry leaf
3     Tbs.      Lemon Juice
2     Tbs.      Red Vinegar
1/8  tsp.       Black Pepper, ground
2     Tbs.      Olive Oil




Ingredients To Dice:

1     Tomato, small dice
1     Cucumber, peel, small dice
1/4  Red Onion, small dice
1     Red Pepper, small dice
1     Green Pepper, small dice
3     Green Onions, sliced thin

Garnish:
1     Avocado, peeled, sliced thin
1     Lemon, cut into wedges


Gather all ingredients together.

Dice and chop as specified.

Place all ingredients into a very big bowl.

Toss well by hand.

Serve with sliced avocado and lemon wedges.


New Taste Thinking:
When you look at these ingredients you may think, out of habit, that it would be a good idea to add some feta cheese to this salad.
Having tried this salad with and without feta cheese, I can tell you that the cheese is not needed.
This recipe makes a lot of kasha salad. Bring half of this wonderful, healthy dish over to a friend or someone who may need it.
The cost of the ingredients is reasonable and the appreciation will be worth it.
