Green Lentil Bean Soup
w/ garlic, mushrooms and kale

Ingredients:

1    Onion, small dice
2    Celery Stalks, small dice
3    Carrots, thin slice, round
1    Green Pepper, small dice
8    Ounces Mushroom, white, thin slice
1/4 Cup Garlic, minced, 1 1/2 ounce
3    Tbs. Olive Oil

2    Cups White Wine
2    Teaspoons Herbs De Provence
1/4  tsp. Black Pepper, ground
1/4  tsp. Crushed Red Pepper
1/2  tsp. Salt

2    Cups Green Lentil Beans
1    Can Crushed Tomatoes, 28 ounce
12  Cups Vegetable Stock
1    Head Kale, washed well, chopped, no stem

1   Tbs. Lemon Juice
1   Tbs. Red Vinegar
 

Cut and dice first 7 ingredients in recipe
Place ingredients into large pot

Sautée ingredients for about 5 minutes on high heat.
Onions and garlic should just be softening.

Add wine plus herbs and spices to soup.
Let wine reduce in soup for a few minutes.
Notice the aroma, it is amazing.

Add the beans, tomato and kale to the pot.

Add 12 cups vegetable stock to pan.

Bring everything to a boil.

Turn down heat and simmer soup for one hour.

Remember to stir soup from time to time.

Add the lemon juice and red vinegar.

Simmer another couple of minutes.

Remove and serve or chill for later.

This recipe yields one gallon of soup.

It freezes well.

New Taste Thinking:
If you can not find green lentils you can just go with regular brown lentils.

This soup is one of those recipes that I eat one third, freeze one third and give one third to a friend.

Herbs de Provence is a blend of dried herbs from the south of France. It usually contains most of the following:
Thyme, savory, lavender, tarragon, fennel, rosemary, marjoram and basil.
Today I purchased a few tablespoons from the bulk spice bins. When they put it on the scale it did not even register because it was so light.
I like to buy small amounts of dry spices from the spice bulk bins because they don't get stale and outdated in my cabinet.
