Quick Lunch Omelet

Ingredients:

3     Egg Whites
1/2  tsp. Olive Oil
1/3  Cup Kasha
1/4  Cup Corn Kernels
1/4  Avocado, diced
1     Cup Marinated Vegetables
pinch salt and pepper

 

Heat cast iron pan..Brush with oil..Add eggs and cook a few seconds.. Remove pan fom heat.


Place kasha and corn onto a plate..Heat in microwave for a minute..

Add kasha, corn and avocado to the pan..Sprinkle with salt and pepper..

Fold omelet in half and flip onto a plate..Garnish with marinated vegetables and serve..

New Taste Thinking:

This is one of those toss together dishes that you can make with leftover food in the fridge.
You can obviously make the omelet with whole eggs if you like and you can also substitute any cooked grain for the kasha. Here is another example of grains and eggs, the whole grain frittata.
The cast iron frying pan is a good investment as it will last a lifetime. After seasoning the pan correctly it is great for cooking eggs and omelets as they should not stick to the pan.
